I recently bought an Acer Aspire 5532 with an AMD Athlon 64 X2 Processer (L310) 1.20ghz.
I noticed some of the Acer Aspire 5532 models also come with a 1.6ghz dual core. If I got one of these chips would I be able to switch them over?

Unfortunately, Acer does not consider the processor of the Aspire 5532 to be user upgradable.

I am not saying that it can not be done. We have not tested all processors in this system, so we can not guarantee compatibility. If you feel like you can do it, then you are free to do so, but Acer will be unable to provide assistance with the upgrade, and is not responsible for any damages that could occur.
